Preparation Guidance

  • For Raw Preparations: Use a sharp knife to separate the lean back loin from the bone for clean sashimi or nigiri slices.

  • Thawing: For the best quality, thaw slowly in the refrigerator (below 4°C) for 6–12 hours. Do not refreeze after thawing.
