Iberico Pork Steak

Ingredients:
- Iberico Pork - Pluma
- Maitake mushrooms
- Ponzu
- Yellow & Red Bell Pepper
- Red Onion
- Dill
Instructions:
- Thaw the Iberico Pulma.
- Pat dry with kitchen paper.
- Season both sides with salt and pepper.
- Preheat pan.
- Place pork skin-side down, cover, and sear on medium heat.

Flip when golden and cook on low.
- After 5–10 minutes, remove from pan. (If you prefer it fully cooked, cook longer!)
- Sauté Maitake in the same pan with butter.
- Mince peppers and onion, mix with ponzu for a quick salsa.
- Slice pork, plate with maitake, spoon over ponzu salsa, top with dill if desired.
