Ingredients:

Instructions:

    1. Thaw the Iberico Pulma.
    2. Pat dry with kitchen paper.
    3. Season both sides with salt and pepper.
    4. Preheat pan.
    5. Place pork skin-side down, cover, and sear on medium heat.
    6. Flip when golden and cook on low.
    7. After 5–10 minutes, remove from pan. (If you prefer it fully cooked, cook longer!)
    8. Sauté Maitake in the same pan with butter.
    9. Mince peppers and onion, mix with ponzu for a quick salsa.
    10. Slice pork, plate with maitake, spoon over ponzu salsa, top with dill if desired.
