Miso Salmon with Purple Rice & Veggies

Ingredients:
- 4-5 lb Fresh Atlantic Salmon Fillet
- 1 lb miso paste
- 4 oz sugar
- 1 oz soy sauce
- 6 oz sake
- 1 head of broccoli
- 1+1/2 cups of white rice
- 1/3 cup 16-grain rice
Instructions:
- Slice salmon fillet.
- Mix miso, sugar, soy sauce, and sake into a marinade.
- Brush the salmon generously with the marinade and refrigerate for at least 30 minutes up to 24 hrs.
- Boil broccoli for 2 minutes with a pinch of salt.
- Pan-fry the marinated salmon until both sides are golden and slightly charred.
- Serve over purple rice made by mixing white rice with 16-grain rice, alongside broccoli.
