Miso Salmon with Purple Rice & Veggies

Ingredients:

    • 4-5 lb Fresh Atlantic Salmon Fillet
    • 1 lb miso paste
    • 4 oz sugar
    • 1 oz soy sauce
    • 6 oz sake
    • 1 head of broccoli
    • 1+1/2 cups of white rice
    • 1/3 cup 16-grain rice

Instructions:

    1. Slice salmon fillet.
    2. Mix miso, sugar, soy sauce, and sake into a marinade.
    3. Brush the salmon generously with the marinade and refrigerate for at least 30 minutes up to 24 hrs.
    4. Boil broccoli for 2 minutes with a pinch of salt.
    5. Pan-fry the marinated salmon until both sides are golden and slightly charred.
    6. Serve over purple rice made by mixing white rice with 16-grain rice, alongside broccoli.
